Creamy Vegetable Soup Recipe

I want to share to you the recipe of the soup my family enjoyed on our lunch today. It is a CREAMY VEGETABLE SOUP that is not just palatable to your kid’s taste but nutritious too.

CREAMY VEGETABLE SOUP

Ingredients:
1/2 cup onions, diced
1/8 cup celery, sliced
1/2 gm garlic, minced
1 tsp olive oil
1 1/2 cup water
1 tbsp chicken-style seasoning
1/4 tsp salt (adjust if necessary)
1/4 tsp onion powder
1/4 tsp parsley, dried
1/8 tsp basil, dried
1/2 cup potatoes, diced
1/2 cup carrots, diced
1/2 cup cauliflower, chopped
1/2 cup peas or broccoli florets

for cashew cream:
1 cup water
1/3 cup raw cashews, rinsed
1 1/2 tbsp unbleached flour

PROCEDURE:

In a blender, combine 1 cup water, unbleached flour and cashew nuts. Blend it on high speed until creamy. Set aside this cashew cream.

Saute garlic, onions and celery in olive oil until tender.
Add 1 1/2 cups of water and seasonings and bring it to boil. Put potatoes and carrots to the boiling solution and adjust its heat to low fire and simmer it until vegetables are half cooked. Pour cashew cream into the soup stock while stirring constantly until thick. Bring it to boil. Add up peas or broccoli florets and cauliflower and simmer in low fire for about 5 minutes. Serve hot.
