My Favorite Vegetarian Recipes

I want to share to you three of my favorite vegetarian recipes. Vegemeat Curry,Vegetarian Casserole and Banana BlossomTempura. Hope you will love them.

VEGETARIAN CURRY
Ingredients:
½ kilo vegemeat, cubed, slightly fried
1 potato, cubed, slightly fried
1 carrot,cubed, slightly fried
1 red or green bell pepper, squared
1 cup thick coconut
½ tablespoon curry powder
1 onion, ringed
Salt to taste

Procedure:

  • In a cooking pan, combine coconut milk, onion and bell pepper. Bring to boil.
  • Season with salt.
  • Add rest of the ingredients and simmer for 3 minutes.
  • Serve hot.

VEGETARIAN CASSEROLE
Ingredients:
¼ kilo vegemeat, cut into strips
½ small can mushroom soup
½ small can evaporated milk
¼ cup cheddar cheese, shredded
½ cup bread crumbs
1 onion, finely chopped
Salt to taste

Procedure:

  • In sauce pan, combine mushroom soup, milk and onion. Heat thoroughly.
  • Add vegemeat. Remove from fire then set aside.
  • Spread bread crumbs on bottom of greased casserole.
  • Pour mixture over crumbs.
  • Sprinkle with cheese.
  • Bake until cheese has become light brown.

BANANA BLOSSOM TEMPURA
Ingredients:
1/2 banana blossom
1 egg, beaten
1 tablespoon flour
1 tablespoon cornstarch
1 onoin, chopped
Salt to taste
Water
Tomato catsup

Procedure:

  • Remove the hard portion of banana blossom and cut lengthwise into 3 parts.
  • Soak in water with a little salt for few minutes.
  • Boil until half done, drain and set aside.
  • Mix beaten eggs thoroughly with flour,cornstarch and onion. Add water until batter slightly thickens.
  • Season with salt.
  • Dip banana blossom into flour mixture.
  • Deep fry.
  • Serve hot with catsup.

NOTE: The three recipes are good for3 servings.
